澳门“美食之都”的历史基础、申报过程及其发展路径

2017年11月1日,澳门正式获评为联合国教科文组织创意城市网络(UCCN)美食范畴的新成员城市。这也是继成都、顺德成功加入网络后,第三个获颁“创意城市·美食之都”的中国城市。澳门获评为“美食之都”,既是联合国教科文组织对澳门美食文化遗产的肯定,同时也为澳门美食旅游的发展带来新的机遇与挑战。借“美食之都”的城市名片,如何为澳门开辟一个多元化、独特和可持续发展的城市新视野,包容及吸纳他人之长而创造澳门自身特色,如何有体系地培养人才,如何发挥本土特色、传承老店传统与文化,并且使用前沿的方式对澳门的美食旅游进行宣传,都将成为澳门作为“美食之都”未来建设和发展的重中之重。

Abstract

Macau has been officially selected as the new member of “UNESCO Creative Cities Network(UCCN)” on November 1st 2017. Macau became the third Chinese city which is awarded the “Creative City of Gastronomy” after Chengdu and Shunde joined the network successfully. Macau rating as the “City of Gastronomy” indicated the recognition of Macau’s food cultural heritage by UNESCO,which will also bring new opportunities and challenges to the development of food tourism in Macau. How to open up a new vision of a diversified,unique and sustainable city for Macau;how to create Macau’s own characteristics by taking advantage of the city’s name card of “City of Gastronomy” and embracing and absorbing the advantages of others;how to research systematically and cultivating talents professionally;how to inherit the tradition and culture of the traditional shops,and to propagate the food tourism of Macau in a leading way according to the local advantage. All of these above will become the important parts of future development of Macau as a “Creative City of Gastronomy”.
