赌收下滑背景下的澳门餐饮业:现状、问题与对策

在博彩业持续波动的环境下,2016年澳门餐饮业整体盈利能力下降,预计2017年澳门餐饮行业总体收入方面会有一定增长。本文从澳门多元化饮食背景、餐饮在旅游消费中的重要地位、餐饮行业业态三方面考察澳门餐饮业发展现状,对澳门餐饮业目前遇到的困境和问题进行分析,在此基础上,提出澳门餐饮业可利用公共营销推广本地美食,深挖饮食文化资源,利用节事活动打造美食之都形象,加快饮食业的创新速度,增设行业认证制度培养本地餐饮业人才,以及扶植和帮助餐饮老店永续经营等对策和建议。

Abstract

Every year,more than 30 million tourists visit Macau to experience this convergence of Chinese-Western culture as well as to taste the local cuisine. Catering industry plays an important role in tourism industry. Over the past decade,the per capita consumption of food and beverage in Macao accounted for one-third of the total tourist consumption for a long period of time. Driven by the fluctuation of gaming industry,the overall profitability of the catering industry in Macau declined in 2016. The overall revenue of this industry is expected to increase in 2017. Due to the plummeting of demand in food services from both residents and tourists,the rising of rental price,the labor and the raw materials,the catering industry’s profits will be further squeezed. How to build Macau as “City of Gastronomy” to stimulate domestic economy,expedite process of establishing “World Tourism and Leisure Center” remains one of the most urgent issues that need to be addressed. The multidimensional dining background of Macau,the significant role of catering industry in tourism consumption and the status quo of the industry are explored in this paper to investigate the development of Macau catering industry. On the grounds of the analysis of the dilemma and the problems,this paper suggests public marketing to promote local specialty and to dig out the dietary culture hidden behind,leverage festivals and events to strengthen the image of “City of Gastronomy”,fasten the catering innovation,add certified system for personnel training within the catering industry,invest and support the sustainable operation of time-honored restaurants.
